In 1827, the chocolate factory operated by André Lhœst, who had himself bought it from Henri Duthu, a pharmacist, was taken over by Pelletier. He thus created the Compagnie Française des Chocolats et des Thés Pelletier & Cie, with factories in Paris, London and Strasbourg equipped with chocolate grinding machines invented by Pelletier.
He then created, in partnership with François Schaal a branch in Strasbourg called the Compagnie Française des Chocolats et des Thés L. Schaal & Cie.
In 1895, the Swiss poster designer Théophile Alexandre Steinlen designed a famous advertisement for this company featuring a mother and her daughter drinking a cup of hot chocolate, accompanied by a greedy cat.
