In 1827, the chocolate factory operated by André Lhœst, who had himself bought it from Henri Duthu, a pharmacist, was taken over by Pelletier. He thus created the Compagnie Française des Chocolats et des Thés Pelletier & Cie, with factories in Paris, London and Strasbourg equipped with chocolate grinding machines invented by Pelletier.

He then created in 1871 in partnership with François Schaal a branch in Strasbourg called the Compagnie Française des Chocolats et des Thés L. Schaal & Cie.
